It starts with taking the wheel out. 

When changing sprockets, a good tip is to wear decent gloves coz the old sprocket teeth can be very sharp and it is always possible for a spanner to slip doh

is there a simple step by step for getting the rear wheel off for just a rear sprocket change?

 

im going from a 44 to a 47.

do you have to remove the nut altogether or could you simply loosen it enough to remove the chain, then remove the whole lot?
would that be possible?

To take the lot out would involve taking the retainers off the ends of the swing arm - have a look at the pics or your bike.

Much easier to remove the axle. That also gives you the chance to clean it up and regrease it so that it doesn't seize in place.
