Looks like a good project you've taken on. I would start by going through the mechanicals first - wheel bearings, swingarm bearings, brakes and steering bearings, then you know nothing's going to fall off or seize up on you. Cosmetics can come later as nonessentials, although sometimes it's nice to get something looking prettier just for the good mood it puts you in. Polishing up plastics is a time consuming job though - keep your eye on things like ebay for good used panels.
Interesting end can. Is it loud?

That ktm can isn't to bad actually, the throttle was sticking bad so I got that cleaned up and fixed, can tell it was neglected for sure. I'm gonna move on to bearings next. Is waiting for some plastics on eBay the only way to come by some or is there any aftermarket ones out there

might surprise you , if you clean and tidy parts as you service the essentials the bike looks like it may well turn out OK . looking a the cases ext may not have done a lot of miles just hasn't been cared for .

once that black paint is off it looks like there's a nice blue bike under it

Well worth a try at cleaning up. I tried some aftermarket White panels from China, as Yamaha are not making them any more, wished I hadn't cry never seen plastic like it, looked like someone had made them by hand and the actual plastic feels like it will shatter on any impact!

Lucky for us all the blue panels are still available smile
