Usually the brake hose isn't a problem. At least I have never heard that it has been.
You can get some extra play on the throttle cables by separating the throttle body from the starter switch and swivelling it around 180 degrees so that the cables route under the bars.

I managed to fit +30mm risers AND Dakar high bars with the stock front hose and stock throttle/clutch cables. It took a little tweaking: the throttle was inverted so the cables exited the bottom of the bar, for the clutch cable I re-routed it so it didn't pass round the front right of the frame head tube but went past the left side and under the tank, this gives just enough extra length.
