Is it easy to re-grease the wheel bearings whilst the wheel is out or would it involve destroying the seals?  Never done it befoe

They are sealed units not supposed to be pulled apart really, if you have had them long enough to dry out then they are most likely shagged out anyway. Tap em out n stick new ones in they aren't that expensive

Also depends what type of seals are fitted to the bearing. Open, steel or plastic. (link for pic)

If they are open it's easy to push some grease in. If they are plastic seals they pop out easily and can be greased. Forget it if they have steel seals.
As Pete said, if they are old and look dry replace them, good brands like SKF and Koyo can be had for little money.

Busted my front left bearing a few days ago on the road, and had to cross a mountain pass to get to the next city to buy replacements. It's not fun at all ( not really it was really fun). You should replace the bearings when you feel like they are old. They are very cheap, only 3-4 $ for good Japanese made ones. Remember to pry the plastic out and put grease into the bearings. Also replace bearings as a set.
